Cranberry & Chocolate Chip Oatmeal Cookies
I don’t typically share food posts but thought it might be fun to share this with you today. Last week I bought chocolate chips with plans on making cookies but never ended up making them. What did end up happening was opening the bag and grabbing mini handfuls whenever I passed through the kitchen (oops, ha!).
Whenever Trisden caught me sneaking a handful of chocolate chips he’d ask me where those cookies were. Over the past few days I had accidentally consumed half the bag of chocolate chips with no cookies to show for it so I figured I should probably make some for poor Trisden since he had been patiently waiting all week.
Since half the bag of chips were gone, I rummaged through the pantry for some other goodies to add to the cookies to fill the void of the missing chips. I found some quick oats and dried cranberries and thought hmm, these might be good to add, and I was right! They turned out really good!
Cranberry & Chocolate Chip Cookie Recipe
Here’s what you’ll need:
2 cups flour
1/8 tsp salt
1 tsp baking powder
1 cup brown sugar
1/2 cup sugar
1 stick of butter (melted)
2 large eggs
2 tsp vanilla extract
1/2 bag of semi sweet chocolate chips
1/2 cup dried cranberries
1/2 cup quick oats
Directions:
Preheat oven to 350 degrees.
In a medium bowl combine the dry ingredients (flour, salt, and baking powder) and set aside. In the bowl of a standing mixer add brown sugar, white sugar and melted butter until combined. Add vanilla and eggs and continue to mix for a minute.
With the mixer still on, slowly add the dry flour mix. Keep mixer on until just combined. Now, take a spatula and stir in chocolate chips, cranberries, and oats.
Spoon mixture with a cookie scoop on to an ungreased cookie sheet. Bake for 15 minutes or until the bottoms turn a light golden brown. Place cookies on a cooling rack for at least 20 minutes. Enjoy!
This recipe makes about 20 good sized cookies.
